Quiche is one of those things that sounds fancy but is actually fairly easy to prepare and make.

And the best part is that you can fill it with all sorts of stuff! This means it can be vegetarian, meaty, cheesy, creamy…. or a mix of all.

Below is a guide on how to whip up a easy quiche and some ideas for fillings. Let’s get into it.


Vegetarian Quiche Fillings

If you are a veggie lover, quiche is your best friend. There are so many options, and they are all super tasty.

Spinach and Feta – This is a classic combo. Just chop up some fresh spinach (or use frozen but make sure to drain it really well). Crumble some feta cheese into the mixture, or place it on top. The saltiness of the feta and the freshness of the spinach are like a match made in heaven.

Mushroom and Onion – Saute some chopped mushrooms and onions until they are soft and golden. This is a nice savory flavored quiche. You can even add a little garlic or butter for extra kick.

Broccoli and Parmesan– Chop up some small pieces of broccoli and add in grated parmesan cheese. This is a great one if you like a bit of crunch with your cheese.

Zucchini and Bell Pepper – Slice up zucchini and bell peppers thin, then toss them in. They add some fantastic color and a bit of sweetness.

Honestly, anything you like can go into a vegetarian quiche. Just saute the veggies or salads first so they do not make the quiche watery. That is a pro tip I learned the hard way.


Meat Quiche Fillings

If you are more into the meaty stuff, no worries. Quiche can handle that too. Here are some ideas.

Ham and Cheese – This is a classic. Use diced ham and whatever cheese you like (cheddar or Swiss are my faves). It is simple but super good.

Bacon and Gruyere – This one’s a little fancier because of the Gruyere cheese, but bacon makes everything better, right? Fry up the bacon until crispy, and mix it into the quiche.

Sausage and Mushroom – Cook up some sausage and toss in some mushrooms for an awesome savory quiche. The flavors blend really well together.

Chicken and Spinach – Got leftover chicken? Shred it up and mix it with spinach for a protein packed quiche. Add some cheese if you want (I always do).

You can mix and match any meats and cheeses too. That’s the cool thing about quiche… it’s flexible!


Quiche Serving Options

So you have made your quiche. Now what?

Quiche is awesome because it is good hot, cold, or somewhere in between. You can slice it up and serve it for breakfast, brunch, lunch, or even dinner.

  • Breakfast/Brunch.. Pair it with a fruit salad, some toast, or even a smoothie. It is filling but not too heavy to leave you lethargic all morning.
  • Lunch.. Quiche and a simple green or garden salad make a great combo. Light but still satisfying.
  • Dinner.. Serve your quiche with some roasted veggies or a side of potatoes. Or pair it with your favorite salad recipe. Quiche and salad is my go to.

Leftover quiche? No problem! Just pop it in the fridge, and it’ll be good for a few days. You can reheat it in the microwave or eat it cold if you’re in a rush. Quiche is the perfect meal prep option if you are busy.

Easy Quiche Recipe

Ingredients

  • 4 large eggs
  • 1 cup milk
  • 1 small red bell pepper deseeded and finely diced
  • A handful of spinach leaves roughly chopped
  • 1 small brown onion finely chopped
  • 1 cup grated cheese
  • 4 tablespoons cream (any cream, inc sour cream or greek yoghurt)
  • 2 tablespoons flour for dusting

Instructions

  • Preheat oven to 375°F (190°C). Grease and dust with flour a 1.5-inch / 4cm deep, 9-inch / 22cm (base) ovenproof ceramic dish or pie plate.
  • Heat oil in a non-stick frying pan over medium heat. Add chopped onion and bell pepper. Cook, stirring often, for 3-5 minutes or until soft. Remove from heat and set aside for 5 minutes to cool.
  • In a jug or bowl, whisk together eggs, milk, and cream. Season to taste with salt and pepper. Add the cooked onion, bell pepper, and spinach leaves. Stir together.
  • Pour the mixture into the greased and floured dish. Bake for 35-40 minutes, until firm and golden. Remove from the oven and allow to cool before serving.

Mexican Pumpkin Pasta Bake

Mexican Pumpkin Pasta Bake is a super easy to prepare vegetarian pasta bake. Any short pasta will work, like shell or macaroni. Feel free to add chilli if you want to add more spice. This recipe also freezes well if you want to put away some portions for later.

Servings: 4 people

Ingredients

  • 8.8 oz dried penne pasta
  • 1 tbsp oil
  • 1 lb pumpkin peeled, cut into 3/4inch cubes
  • 1 red onion finely chopped
  • 1 red capsicum / pepper deseeded, coarsely chopped
  • 14 oz can diced tomatoes
  • 14 oz can black beans rinsed, drained
  • 6 oz chilli con carne recipe base * or make your own (details below)
  • 7 oz 2 cups grated cheese
  • Sour cream to serve
  • Chopped fresh coriander to serve

Instructions

  • Preheat oven to 350/370 F fan-forced.
  • Cook the pasta in a large saucepan of salted boiling water as per packet instructions. Drain.
  • Meanwhile, heat the oil in a deep frying pan over medium heat. Add the pumpkin, onion and capsicum and cook, stirring, for 5 minutes or until the pumpkin starts to soften. Add the tomato, black beans and chilli con carne base and stir to combine. Bring to a simmer. Cook, stirring occasionally, for 5 minutes or until sauce thickens slightly.
  • Add the pasta and half the cheese to the tomato mixture. Season. Toss to combine. Transfer to a oven proof dish. Sprinkle with remaining cheese.
  • Bake for 20 minutes so that cheese is melted and golden. Set aside for 5 minutes to cool slightly. Top with sour cream and sprinkle with coriander, if using.

How to Make Chili Con Carne Recipe Base

The following will make about 6 ounces (3/4 cup) of chili con carne base, perfect for adding to your Mexican Pumpkin Pasta Bake or other recipes.

Ingredients:

  • 4 cloves garlic, minced
  • 4 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup tomato sauce or crushed tomatoes

Instructions: Combine all ingredients and mix well.

Or when making the Mexican Pumpkin Pasta Bake, add listed chili con carne ingredients to the pan along with the diced tomatoes and black beans. Stir well to combine and let the mixture simmer before adding the cooked pasta.
