Cheesy Chicken Fajita Rice Bake

Ingredients

  • 2 tbsp oil
  • 1 medium red onion thinly sliced
  • 1 large red capsicum/bell pepper coarsely chopped
  • 10.5 oz 1 1/2 cups long grain rice
  • 1 oz sachet taco seasoning
  • 1 barbecue chicken skin and bones discarded, meat chopped
  • 25.5 fl oz 3 cups Chicken Liquid Stock
  • 13 oz jar chunky salsa
  • 10 oz 3 cups grated pizza cheese
  • 7 oz 3/4 cup Sour Cream, pre stirred
  • 9 oz cherry tomatoes quartered
  • 1 avocado coarsely chopped
  • 2 green shallots thinly sliced

Instructions

  • Preheat oven to 210C/400F. Grease an 8 cup capacity baking dish.
  • Heat 1 tablespoon of 2 tbsp oil in a large frying pan over high heat. Add the sliced red onion, and chopped red capsicum/pepper. Cook, stirring, for 4-5 minutes or until the onions have softened. Add the long grain rice. Cook for 1-2 minutes. Sprinkle over sachet of taco seasoning. Stir to combine. Remove from heat.
  • Add the barbecue chicken, Chicken Stock, salsa jar and 2 cups of cheese. Pour the mixture into the prepared baking dish. Dollop over Sour Cream. Sprinkle with the remaining cup of cheese. Cover with foil and bake for 30-35 minutes or until golden and most of the liquid has been absorbed. Remove foil for the last 5 minutes of cooking. Set aside to cool slightly for 10 minutes.
  • Serve topped with cherry tomatoes, chopped avocado and shallots.

Taco Seasoning Ingredients

  • 1 tablespoon chili powder
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon paprika (regular or smoked)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
