Ingredients

  • 20 ounce bag cheese tortellini or Gnocchi
  • 1 cup Pesto Paste
  • 1 cup cherry tomatoes sliced in half
  • 1 cup spinach, red onion, peppers roughly chopped
  • 12 ounce container mozzarella or parmesan balls drained
  • Diced Chicken Breast or Thighs optional

Instructions

  • Bring a large pot of salted water to boil. Add tortellini and cook for 1 and 1/2 minutes. Do not over cook!
  • Drain and rinse under cold water until cool.
  • If using chicken, brown on high heat in lightly oiled fry pan. Turn to medium heat and cook chicken through. Remove from heat and allow to cool to room temperature.
  • Place tortellini in a large serving bowl. Add in pesto, tomatoes and other salads/veggies and cheese. Also add Chicken if using. Toss well to coat.
  • Serve at once, or cover and place in the fridge for up to 3 days.


Pesto Salad Dressing or Paste (1 Cup)

Store in an airtight container in the fridge for up to a week or freeze in portions for later use. Enjoy your fresh pesto with pasta, salads, or as a dip.

  • 2 cups (50g) fresh basil leaves, packed
  • ¼ cup (30g) pine nuts (or walnuts for a budget-friendly option)

  • ½ cup (120ml) extra virgin olive oil
  • ½ cup (50g) grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon lemon juice (optional, for extra brightness)

  1. Blend the Nuts & Garlic – In a food processor, pulse the pine nuts and garlic until finely chopped.

  • 15 oz can pineapple chunks in natural juice 425g can
  • 1 garlic clove crushed
  • 1/4 cup soy sauce 60ml
  • 1/4 cup tomato sauce 60ml
  • 1 tbsp malt vinegar 15ml
  • 1/4 cup cornflour (45g)
  • 1 brown onion chopped
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 2 green onions cut into 3/4-inch (2cm) pieces
  • 4 cups steamed rice

Instructions

  • Heat oil in a frying pan over medium to high heat. Cook the chicken stirring often for about 5 minutes or until cooked through. Remove from pan and put aside.
  • Drain the pineapple, reserving the juice. In a medium jug, combine the cornflour, reserved pineapple juice, garlic, soy sauce, tomato sauce, and vinegar.
  • Heat extra oil in a wok or frying pan over high heat. Add the brown onion and bell peppers. Stir-fry for about 2 minutes or until they start to soften. Add the sauce mixture and stir-fry for 1 minute or until the sauce bubbles and thickens.
  • Add the pineapple chunks, cooked chicken, and green onions, stirring until heated through.
  • Remove from heat and serve immediately.
