  • 1 medium onion finely chopped
  • 4 cups chicken broth
  • 2 garlic cloves minced
  • 1/4 inch piece ginger (3cm) peeled and finely grated
  • 2 tbsp crunchy peanut butter
  • 1 tbsp peanut oil
  • 2 tbsp soy sauce
  • 1 tbsp sweet chili sauce
  • 5 oz vegetables (snow peas, carrots, peppers, (150g) 150g snow peas, trimmed and sliced on the diagonal
  • 16 oz thin Hokkien noodles (450g)
  • Fresh cilantro, bean sprouts, green onions, red chili, crushed peanuts, lime wedges for garnish and serving

Instructions

  • Heat the peanut oil in a large pot over medium-high heat. Add the chopped onion and cook, stirring, for about 3 minutes or until it starts to brown. Add the garlic and ginger and cook for another 30 seconds, stirring constantly, until fragrant.
  • Add the satay sauce and stir to combine. Pour in the chicken broth and the rest of the coconut cream. Bring to a simmer.
  • Add the chicken breasts to the pot. Simmer gently for 8-10 minutes or until fully cooked through.
  • While the chicken is cooking, stir the peanut butter, soy sauce, and sweet chili sauce into the soup. Add the vegetables and noodles. Cook for another 3 minutes, or until the veggies are tender and the noodles are heated through.

  • 2 garlic cloves finely chopped
  • 1 tbsp barbecue sauce
  • 2 tbsp brown sugar
  • 1/3 cup soy sauce
  • 2 tbsp Chinese cooking wine shao hsing
  • 16 oz hokkien noodles (500g)
  • 2 tbsp oil peanut prefered
  • 1 long red chili thinly sliced (optional)
  • 1 tsp sesame oil (optional)

Instructions

  • In a glass or ceramic bowl, mix ginger, garlic, barbecue sauce, brown sugar, 1/4 cup soy sauce, and Chinese cooking wine. Add the chicken slices and toss to coat. Cover and refrigerate for 2 hours for better flavor (optional).
  • Heat a wok or large deep skillet over medium-high heat. Add 1 tablespoon of oil and swirl to coat. Stir-fry the chicken in batches for 3–4 minutes until browned and just cooked through. Transfer the chicken to a bowl.
  • Add the 1 tablespoon of oil to the wok. Stir-fry the red onion, red bell pepper, carrots, and broccoli for about 4-5 minutes until the vegetables are heated through and slightly tender.
  • Return the chicken to the wok and stir-fry for another 1–2 minutes to warm everything through.
  • Place the hokkien noodles in a heatproof bowl and cover with boiling water. Let them sit for 2–3 minutes until tender. Drain and separate the noodles with a fork. Drizzle with sesame oil and the remaining soy sauce (1 tbsp), tossing to combine.

When it comes to stroganoff the choice of noodles or pasta can make a big difference in the overall experience. Egg noodles are the classic choice with their soft slightly chewy texture that soaks up the creamy sauce beautifully. If you are looking for something heartier fettuccine works well, offering a wider surface area to hold the rich sauce. For a more rustic feel pappardelle is an excellent option, with its broad ribbons that pair perfectly with the creamy meaty dish. Rotini or penne are great alternatives too as their spiral or tube shapes trap the sauce ensuring every bite is full of flavor. Choose the pasta that best suits your preference for texture and how much sauce you want to enjoy in each bite.

Easy Stroganoff Recipe

Ingredients

  • 2 tablespoons oil
  • 2 lb boneless meat (1 kg) diced or roughly sliced
  • 1 medium onion thinly sliced
  • 1 garlic clove crushed
  • 7 oz mushrooms (200 grams) sliced
  • 1 teaspoons sweet paprika powder
  • 2 tablespoons worcestershire sauce
  • 2 tablespoons mustard
  • 1 cup chicken broth
  • 1 tablespoons flour
  • 1 cup sour cream
  • chives or parsley finely chopped, for garnish
  • rice, pasta or vegetables for serving

Instructions

  • Heat 1 tablespoon of oil in a skillet or large walled frying pan over medium-high heat. Add the chopped boneless meat and cook. Remove the meat and aside in a separate bowl.
  • Add the remaining tablespoon of oil to the same skillet or pan. Toss in the sliced onion and crushed garlic. Cook, stirring occasionally, for about 3 minutes, until the onion softens.
  • Add the paprika and cook for another minute. Add sliced mushrooms and cook for another minute. Pour in the Worcestershire, mustard, chicken broth and stir well. Let it simmer for 5 minutes.
  • Turn heat to low. Add the sour cream into the sauce, and season with pepper to taste. Place the meat back into the skillet or pan. Add flour and mix well making sure the meat is well coated with the sauce. Let it simmer for 5 minutes.
  • Serve with rice, pasta or vegetables. Sprinkle with chopped chives or parsley.
