Chicken Kiev Pasta Bake

Ingredients

  • 12 oz spiral pasta (350 g) shell / bowtie pasta also works ok
  • 2 zucchini halved lengthways, sliced diagonally
  • 2 chicken breasts cut into bite-size chunks
  • 1 leek trimmed, sliced
  • 3.5 oz butter (100 g)
  • 4 garlic cloves crushed
  • 2 tbsp flour
  • 2/3 cup thickened cream (160 mL)
  • 1/3 cup milk (80 mL)
  • 1/2 cup chopped fresh herbs parsley, chives, whatever you have
  • 2/3 cup parmesan cheese (60 g) grated
  • 1/2 cup breadcrumbs (30 g)

Instructions

  • Preheat oven to 400°F (200°C)
  • Cook pasta in a large saucepan of boiling, salted water according to packet directions. Add zucchini for the last 3 minutes of cooking time. Drain and set aside.
  • Heat oil in a large deep frying pan over medium heat. Add chicken and cook for 5 minutes until just cooked through. Transfer to a plate.
  • Melt butter in the same pan. Add leek and cook for 5 minutes or until softened. Add garlic and flour, cooking while constantly stirring for 1 to 2 minutes until the mixture bubbles.
  • Remove from heat and gradually stir in milk, then cream.
  • Return to medium heat and cook, stirring constantly for 3 to 4 minutes or until the mixture bubbles and thickens. Remove from heat again.
  • To the pan, add chicken, pasta mixture, half the herbs, and half the parmesan. Stir until the parmesan just melts. Transfer the combined mixture from the pan to an oiled baking dish.
  • Combine breadcrumbs with remaining parmesan and herbs in a bowl. Sprinkle over the pasta mixture.
  • Grill for 5 minutes or until golden.
