Ingredients

  • 2 tsp oil
  • 2 onions finely chopped
  • 2 garlic cloves crushed
  • 1 lb ground beef (500 grams)
  • 14 oz can chopped tomatoes (400 grams)
  • 1.25 oz taco seasoning packet
  • 8 flour tortillas
  • 2 cups cheddar cheese shredded 6 oz / 160 g
  • 1 cup sour cream 8 fl oz / 235 ml
  • 2 avocados halved, pits removed, peeled, and thinly sliced lengthwise

Instructions

  • Heat the oil in a large deep skillet over medium heat. Add the onions and garlic and cook stirring for about 4 minutes until softened.
  • Add the ground beef and stir with a wooden spoon to break up any lumps. Cook for 5–6 minutes or until the beef browns.
  • Add in the chopped tomatoes and taco seasoning, cook until the mixture is heated through.
  • Preheat your oven to 350°F (180°C).
  • Layer 2 tortillas over the base of a 10–12 cup (2.5–3L) capacity ovenproof dish. Spread 1/3 of the beef mixture on top. Continue layering with 2 tortillas and another 1/3 of the mixture.
  • Add the remaining 1/3 of the beef mixture, finishing with 2 tortillas on top.
  • Arrange the avocado slices in a single layer over the top tortilla layer. Spread the sour cream evenly over the avocado. Sprinkle the shredded cheddar cheese generously on top.
  • Bake for 35–40 minutes or until the cheese is golden and bubbly. Let it rest for a few minutes before serving.
