Preheat your oven to 350°F (180°C).
Layer 2 tortillas over the base of a 10–12 cup (2.5–3L) capacity ovenproof dish. Spread 1/3 of the beef mixture on top. Continue layering with 2 tortillas and another 1/3 of the mixture.
Add the remaining 1/3 of the beef mixture, finishing with 2 tortillas on top.
Arrange the avocado slices in a single layer over the top tortilla layer. Spread the sour cream evenly over the avocado. Sprinkle the shredded cheddar cheese generously on top.
Bake for 35–40 minutes or until the cheese is golden and bubbly. Let it rest for a few minutes before serving.
