Tater Tot Nachos

Servings: 4 people
- 2 lbs packet frozen tater tots (1kg)
- 1 oz packet taco seasoning
- 2 cups cheddar cheese coarsely grated
- 1 tomato finely chopped
- 1 bell pepper finely chopped
- 1/2 small red onion finely chopped
- Avocado mashed, to serve
- Sour cream to serve
- Your favorite jar of salsa or hot sauce to serve
Preheat oven to 400°F (200°C)
Arrange the tater tots in a large ovenproof pan or baking dish in a single layer. Sprinkle evenly with taco seasoning.
Bake in the preheated oven for 20 minutes or until the tots are lightly browned.
Remove the pan from the oven and sprinkle the grated cheddar cheese evenly over the tater tots.
Return the pan to the oven and bake for an additional 5 minutes, or until the cheese is melted and golden brown.
Remove the pan from the oven and sprinkle with chopped tomato, bell pepper and onion.
Dollop mashed avocado, sour cream, and drizzle with salsa or hot sauce over the top.
