- 14 oz (400g) dried pasta shell/bowties/spirals
- 2 oz (60g) oz butter, melted
- 1 tbsp chopped parsley leaves
- 3 garlic cloves crushed
- 2 tbsp olive oil
- 1 brown onion finely chopped
- 14 oz (400g) mushrooms, thickly sliced
- 1 cup Beef Liquid Stock
- ½ cup light thickened cooking cream
- 7 oz (200g) tub French onion dip
- ½ cup (40g) grated parmesan
- 1 small baguette (optional to serve) cut into 8 slices
Cook the pasta in a large saucepan of salted boiling water for 2 minutes less than the packet directions. Save 1 cup of pasta water into a jug and reserve. Drain the pasta.
Meanwhile, combine the butter, parsley, and 1 garlic clove in a small bowl.
Heat the oil in a large frying pan over medium heat. Add the onion, mushroom, and remaining garlic. Cook, stirring, for 5 minutes or until tender.
Add the stock, cream, and pasta to the pan. Bring to the boil. Reduce heat to medium-low. Simmer for 3 minutes or until the sauce thickens and the pasta is cooked, adding some reserved pasta water if too thick. Remove from heat.
Stir the French onion dip and parmesan cheese through the pasta. Season with salt and pepper.
Toast the bread and while warm, lightly brush one side of each slice with the butter mixture. (optional)
Divide the pasta among serving bowls. Serve with the garlic toast if using.
