- 1 lbs beef mince (500g)
- 1 medium onion finely chopped
- 1 zucchini coarsely grated
- 1 carrot peeled, coarsely grated

- 1/2 cup white rice
- 18 oz jar tomato & basil pasta sauce (500g) any tomato based pasta sauce will work
- 2 cups vegetable stock
- Garlic bread to serve (optional)
Mix well the beef, onion, zucchini, carrot, and garlic until well combined. Use a food process if desired.
Transfer mixture to a bowl and stir in the rice.
Roll a level tablespoons of the mixture into balls and place them on a large baking tray.
Place the pasta sauce and vegetable stock in a large saucepan over medium-high heat. Season to taste.
