- 1/3 cup soy sauce
- 2 tbsp Chinese cooking wine shao hsing
- 16 oz hokkien noodles (500g)
- 2 tbsp oil peanut prefered
- 1 long red chili thinly sliced (optional)
- 1 tsp sesame oil (optional)
Instructions
- In a glass or ceramic bowl, mix ginger, garlic, barbecue sauce, brown sugar, 1/4 cup soy sauce, and Chinese cooking wine. Add the chicken slices and toss to coat. Cover and refrigerate for 2 hours for better flavor (optional).
- Heat a wok or large deep skillet over medium-high heat. Add 1 tablespoon of oil and swirl to coat. Stir-fry the chicken in batches for 3–4 minutes until browned and just cooked through. Transfer the chicken to a bowl.
- Add the 1 tablespoon of oil to the wok. Stir-fry the red onion, red bell pepper, carrots, and broccoli for about 4-5 minutes until the vegetables are heated through and slightly tender.
- Return the chicken to the wok and stir-fry for another 1–2 minutes to warm everything through.
- Place the hokkien noodles in a heatproof bowl and cover with boiling water. Let them sit for 2–3 minutes until tender. Drain and separate the noodles with a fork. Drizzle with sesame oil and the remaining soy sauce (1 tbsp), tossing to combine.
